Baking Booty and the Quest for the Ultimate Pie


I was thrilled to get all this baking booty for my birthday (thanks M and R!!). I had mentioned that I really wanted a big pie dish but I didn't add that I had been looking for pastry weights (I always felt wasteful throwing the rice away after blind baking) and that secretly I have always had a thing for these blackbird steam vents. I got all this and more!!!! The pictured book is fantastic and I read it from cover to cover on Friday night drooling over pretty much all of the 500 recipes and trying to pick one with which to christen the dish.
It was a tough choice but in the end I couldn't go past the strawberry, rhubarb and ginger pie (I'm only human). The filling is just rhubarb, strawberries, preserved ginger (I think I'll try ground ginger next time though), sugar, cornflour and spices. The smell from the oven as it was baking was nothing short of divine. It came out looking heavenly too:


It tasted absolutely delicious (probably about as close to perfect as pie will ever get) but would have been even better had Big I remembered to pick me up some icecream. The one minor flaw is that the filling is very runny (despite the cornflour). Not a big deal as it only affects the presentation, but I would like to find a way to thicken it up a little. Any tips?

I'll give you a tip -- GIVE ME THAT PIE!!!!!!!!!!!!! OMG I love rhubarb pie. Drat. Now I'm hungry and it's all your fault. :)

AAhh I see you are no longer a 30 something mother of two, now you are a 40 nothing mother of two! The very best sort...Happy 40th..woohoo I am also a 1968 baby and am still trying to work out what exhilerating thing ( besides working out how to spell exhiler...oh that word)that i shall do to celebrate my birthday which was in July!! Ah! Someone else who loves the blackbird pie vents! I thought I was the only one! Your pie looks delicious. I believe tapioca works well at keeping the filling from being too runny. I'll ask my mother (who uses it often in her pies) about the correct measurements, etc.
